Advent Calendar Dec 7th and cookie exchange

I don’t know how many times I’ve joined Carol’s virtual Cookie exchange blog hop, maybe it’s the 3rd or 4th year- I just looked it’s been since 2003, I don’t remember if I joined that early!? Maybe I did, I don’t remember, but it seems like I show the same thing every time because it’s SOOOOO good!

But it’s NOT a cookie!!

It’s a cake- a Danish Layer Cake.

over 20yrs ago when I lived in FL and was newlywed, I worked at a Danish restaurant (since I’m from Denmark it was fitting!) and on their dessert menu, they had this 7 layer Danish layer cake “lagkage” I saw the daughter-in-law make this probably twice a week so I knew how it was made and with American ingredients, all except for ONE thing! and for years after that I looked for IT everywhere, it’s called Cherry Kijaffa and I thought it was a liquor so I’d ask at liquor stores and they never heard of it, then I found out one day it was a WINE!! so I’d drive over an hour to a wine store, now in NC and they this pricey wine just for drizzling, it wasn’t until a month ago we went to ALDI and found a German Christmas Cherry Wine- PERFECT!! and the price was a lot less! 😉 – now I doubt I can get it there when it’s NOT Christmas time, but this is the time I usually make it, actually it’s my husband’s favorite and his birthday is in November and Anja’s is right before his, so they both got that cake for their birthdays and then there’s Thanksgiving and Christmas, so….

on to the recipe!

Danish Layer Cake

-make this at least the day before!

1 Box of Yellow Cake Mix

1 Box of Vanilla Pudding

1 Jar of Raspberry Preserves

Cherry Wine

Whipping cream for topping

optional raspberries

These last few times I made the cake, I used a half sheet pan and lined it with wax paper and baked the cake in there, then it only took 20 min!

I cut it either into quarters or into thirds, that depends on how “fancy” you want it, if it’s a 5 layered or 7 layered cake 🙂

First drizzle the Cherry wine on top generously so you can see it soaks in, then raspberry preserves and then the vanilla pudding, then add a layer of cake and repeat until the last layer of cake and drizzle that with the wine.

Then I plastic wrap that and put in the fridge until the next day! It’s BEST at least a day old, sometimes 2 days is better- if it lasts that long!!

When you are ready to eat it, cover it in whipped whipping cream, where I usually add a bit of sugar and vanilla, then top with raspberries and candles if it’s a birthday!!

Yeah the flames got pretty high!! Hubby was checking the lamp overhead. LOL!!

It’s such a yummy and easy cake!

Each day in December until Christmas I list a quilt pattern for sale, but it’s sort of “hidden” you have to guess the clue to reveal what pattern it is then go look for it if you want to buy it.

    1. ha ha, hubby goes there often, it’s just 45min away from us… I grew up with those in Denmark too so it’s a bit like home I guess, I find little European or Scandinavian treats there once in a while, good thing HE goes or I’d be buying all the candy and chocolate there!

  1. That cake looks wonderful! My mom used to make a similar one with strawberries which was absolutely delicious. Will have to try this one for sure.

  2. Now I’m upset about Aldi in PA not selling wine! If we get to an Aldi that is allowed I’ll have to try this.

  8. I’ve grown up eating and enjoying Danish layer cakes my entire life. I grew up in Racine, Wisconsin and it has a huge Danish heritage contingent. We had at least five bakeries and each had a slightly different version of the cake. I never get tired of seeing your yearly cake recipe share! I know how delicious it is. {{Hugs}} ~smile~ Roseanne
