Have you tried the Half Hexagon die by Accuquilt?
It's a great scrap busting die for tiny pieces and the die features 3 sizes!
You can pair it with the matching triangle die, but I like to just use this one, as you'll see below!
Here I made a half hexagon quilt with lots of batiks in blue and yellow and stacked them and because the sides are at an angle, I trimmed the edges once the center of the top was together! I don't have the size of this one, but I'm guessing it's a baby sized quilt.
Another mini quilt I made was a grandmother's flower garden, which is normally EPP with hexagons, but if you plan ahead you can machine sew everything into rows with no Y seams!!

Here I just used scraps of pink and white and when I had enough I turned them into a baby quilt.
Again it takes some planning, so I'd put them up on my design wall and then sew 2 and 2 together on the first row, then press the seams, then sew 4 and 4 together on the first row and 2 and 2 on the second row and continue, then 8 together, plus 4 and 4 and 2 and 2, then once I had 2 rows done, I'd sew those together, while continuing with the 8, 4 and 4 and 2 and 2s, this way the quilt goes together very quickly!

This might not be half hexagons, I actually think it's the large hexagon and matching triangle die (set) but I remember using jelly roll/ 2 1/2" strips and sewed them together, so I guess the hexagon is 8"?? It's just more for inspiration!

If you use the matching triangles (equilateral triangles) you can still sew the pieces into rows!
